Tonight's dinner was
Crockpot Porkchops with Gravy and
Parmesan Mashed Potatoes. Mr. Mamie has a class on Wednesdays, so we need a dinner that will "hold" until he gets home. It was AGONY smelling the delicious porkchops simmering away in the crockpot while I surfed the Internet, watched the news, did some chores... waiting, waiting, waiting to dive in! I did use the last 45 minutes of the wait time to put together the mashed potatoes. I've made these before, so I knew how it would go and how much time would be needed.
The parmesan mashed potatoes were yummy as always, and the pork chops had cooked to falling-apart perfection. The gravy was rich and had plenty of depth, thanks to the various additions to the cream-of-mushroom soup base. We all agreed that his gravy recipe would work well on meats, and I expect that I'll be trying it in other contexts soon.
Mr. Mamie is going some outside work with Igor tomorrow (brrrrrrr, cold!), and he's already looking forward to tonight's leftovers to warm him up when he gets home.
