We modified the Chicken Spaghetti by using whole-wheat linguine and two cans of Italian-style stewed tomatoes, drained (instead of fresh Romas). I also cut back on the Cajun blackening spice in deference to GrandmaT. The one tablespoon + one teaspoon I used was plenty! When it was time to eat, I put lots of feta on top of mine, while Mr. Mamie split between feta and fresh parmesan and GrandmaT went cheeseless. All three plates looked delish, and everyone was satisfied.
We made the Easy Cheesy Rolls using regular Pillsbury biscuits rather than "Grands," and a mix of shredded cheddar/jack (what Costco sells in a giant bag) and they worked fine. Super yummy and flavorful!
This dinner was a hit and is a keeper!
