Gingerbread Waffles and Mandarin Chicken & Rice Bake (not together!)

HA! That would be a weird combination, eh?


Just a mention about Friday night's dinner (which was also Saturday night's dinner - yay, leftovers!): We had TACOS, not the Mongolian Beef and Sesame Noodles that were planned.  The reason for the change is that the Igor Children (Niece and Nephew) were going to be over for dinner, and I wasn't sure how much they'd love my original plan. Also, Nephew has a soy allergy, so I don't want to overload him, which might have happened with those two dishes.  I dug two flat-frozen Ziploc bags of taco meat mixture out of the freezer from my cook-a-thon of a couple a weeks ago - so handy!  Oh, in the interest of truth in advertising... it was actually Mr. Mamie who dug them out of the freezer.  Yeah, whatever.  This batch of taco meat came out really saucy and yummy, and froze really well.  I am sure it's becasue I used this method of preparing the meat from Lynn's Kitchen Adventures!  We ended up with only one kid over for dinner, but the taco stuff fed several people for several meals, and we all love tacos, so it was all good!


Sunday morning Mr. Mamie wanted waffles for breakfast.  I chose to make these Gingerbread Waffles, something I've been wanting to try for a while.  They were very yummy, if a bit complicated to make.  It took three bowls and you have to beat egg whites into peaks, which is kind of ironic when you turn around and smash the fluffy batter in the waffle iron!  At the time I was frustrated by the process (especially becasue I over-filled the waffle iron on the first round and ended up with a big dang mess all over the place).  Sidebar: I ought to put up a picture of my waffle iron some time; it's a little Oster Beligian-style one that Travellin'Dad gave me a a gift about 15 years ago, and it still works great!  The other issue with this breakfast was that I was trying to cook a pound of bacon at the same time (not so that we could eat ALL of it - I had two dinner recipes in mind to use it for in the coming week), which required almost constant tending, AND the STOOPID, dysfunctional fire alarms went off repeatedly throughout the process.  When we finally made it to the table and actually ATE the gingerbread waffles, they were tasty - and yes, IF I didn't have all that other stuff going on at the same time, I do believe that I would make them again.  If you're wondering about the photo, that's Mr. Mamie's plate - he slathered his waffle with Nutella, which is pretty much his favorite condiment!  He even did a bite of bacon-with-chocolate, a la Homer Simpson (yuck!).

Sunday night both kids were over, so I tried the Mandarin Chicken & Rice Bake that had gotten bumped from Saturday due to tons o' tacos.  It was good, everyone liked it, but I'll make a few adjustments for next time.  I had already upped the shredded chicken to three cups (from two), but I should have increased the liquid a bit as well.  Instead of the boiling water, I'll use boiling chicken broth and increase the amount by 1/2 cup.  I'll also slightly increase the soy sauce as well.  I added pimentos, and these were a plus - nice color and flavor.  A little celery would be good also.  The five of us ate the entire casserole for dinner, along with some crescent rolls from a can (we were too lazy to go to The Walmartz for salad stuff, so no greenery with this dinner). I wouldn't have minded leftovers for lunch, and we liked it enough to have it again.  I didn't get a photo before we devoured it, but the casserole was pretty with the green peppers and red pimentos.
