Happily, my instincts were right on, and this meal was enjoyed by all! The only change I made was to use organic brown rice instead of basmati, which worked just fine. They potato type was unspecified in the recipe; I used some Yukon Golds I had available. Next time I make this I may add in some chopped carrots.
I made TWO CrockPots-full (so DOUBLE the ingredients); we ate the contents of one for dinner immediately and froze the contents of the other in a very full gallon-sized Ziploc. We all had full bowls for dinner (Mr. Mamie may have had seconds) and ended up with two good-sized portions (from the first CrockPot) to freeze for future lunches. It's great having a whole meal in the freezer for next month (from the second CrockPot)!
In the photo above I added a little shredded cheddar to the top of my bowl-full, but this certainly wasn't necessary - the flavor of the Hobo Hash was plenty rich and complete on it's own.
This was an easy (particularly because the ground beef does NOT have to be browned before putting it in the CrockPot), hearty, yummy dinner on a cold winter night. i definitely recommend Hobo Hash!

Excellent! I'm going to make a bunch of freezer dinners to have available when the Grs are here babysitting, so that they don't have to worry about dinner. This is perfect!
