12/1 Tues: I return to teaching university night classes today and won't be home 'til late, so we'll have Sloppy Joes (from the freezer-stockpile that resulted from this cook-a-thon) that each person can heat up and eat on their own schedule. Mr. Mamie makes sure that there's always a big bowl of fresh green salad in the fridge as well, which is perfect for fix-it-yourself nights.
12/2 Wed: Chicken Spaghetti with Feta (which I'll be modifying to use whole wheat linguine and a can of Italian-style stewed tomatoes), Easy Cheesy Rolls, green salad.
12/3 Thurs: Mr. Mamie has a class until 7:30, so this is a good night for a crockpot dinner. We'll have Crockpot Porkchops and Gravy, and while I wait for him to get home, I'll make some Parmesan Mashed Potatoes and refresh the green salad supply if needed.
12/4 Fri: Mongolian Beef and Sesame Noodles, mmmmmmmm! These noodles were delicious the first time we had them, and I can't wait to do them again.
12/5 Sat: Mandarin Chicken and Rice Bake, green salad.
12/6 Sun: Baked Spaghetti, which I'll make using some of our homemade freezer spaghetti sauce (another cook-a-thon product) and whole wheat noodles, Italian Cheese Bread (one of our absolute FAVORITES - we have it at least once per week!), green salad.
