Since I moved into this house, I have wanted to "do something" about the back yard. Namely, have grass! GolfDad and Wombat paid to have a sprinkler system put in and concrete curbing poured, but we never got much further than that in terms of a lawn.
Wombat and I planted a Globe Willow (which thrived) and a Carolina Cherry (which croaked). We also planted two honeysuckle vines and two star jasmines, which have done well. GrandmaT has planted a number of day lillies and irises that have also done very well and produce beautiful flowers every spring. My friend KP gifted me a lilac bush for my birthday 5 years ago, and it has flourished.
We've used various parts of the yard as gardening space, with four raised beds now permanently installed on the west side, and a gate to keep pesky doggies out. We have four bins/barrels of compost "going." Mr. Mamie put up an outdoor clothes line for me a couple of years ago. We've got a big gas grill on the (small) patio, and we have a decent table inherited from the Igor family that is jealous that we always use the table on the front patio. In short, just about everything a backyard could want.
But.. no grass. At one point Mr. Igor had a rented rototiller he was using in his yard that he brought over, and we tilled up all the hard packed dirt. But... no grass. Somehow we just never followed through on either planting seed (so much tending!) or ordering/paying for/laying sod. It seemed like an overwhelming task to do it all at once.
But.. grass! On Thanksgiving weekend of last year a friend/colleague posted on Facebook that her family had 11 rolls left over from their sod installation. I piped up immediately that we would gladly take it, and my friend and her nice husband very kindly delivered it. Niece and Nephew were drafted to help get it laid out - a great "learning experience" for them!
We were able to do the whole strip between the back of the house and the back wall (south side). That left the east side, where the compost corner, globe willow, a/c compressor, clothesline, and double gate between our rock driveway and yard are.
About three weeks ago our neighbor across the street had sod delivered for his back yard and the neighbor on our east side's front yard. They had four rolls left over, so they brought them over and we extended out from the narrow section behind the house.
And THEN, a few days ago the same neighbor said that they guy behind his house (on the next street over) had a BUNCH of rolls left over - as in, 23! Last night he brought it over in a truck (so much better than walking around the block with a wheelbarrow!), backed up to our double gate, and we unloaded it.
Rather then rent or borrow a rototiller for a relatively small space, we just used the Igors' "claw" tool, as we did in November. You can see the handles of the claw below, along with Copper being (not) helpful.
After thoroughly wetting the dirt to make it easier to break up/pull weeds, we could see that we had some very un-level spots!
Nephew did a lot of dirt-breaking and weed-pulling.
Brother Igor shoveled dirt around to try to level the area a bit.
Igor takes a break while Mr. Mamie shovels. Nephew is clucking over the wall at the neighbor chickens.
Mr. Mamie and Nephew, unrolling and cutting sod... yay! Igor's in the back, cutting pieces to fit around the tree and in the curved corner by the compost bins.
Igor filling in along the curbing. Copper is chewing up a stick.
Nephew takes a break while Niece's cute friend tries to entertain Copper.
WE HAVE GRASS!
We need about 16 more rolls to finish the east side and do a tiny section in the southwest corner behind the house. That's a manageable amount to purchase and haul home from Home Depot, which I hope to do at the end of the month (once school's out).
Happy!

Menu Plan... For a While
This is a BUSY time of year school-wise, and we're trying reallllllly hard to eat way more fresh, plant-based foods (which means several nights are just "big salad" nights). So, here are some things we'll be having in the next couple weeks:
Southwest Salad with Taco Ranch Dressing (made with Greek yogurt and regular oragnic milk, becasue that's what I have).
Thai Chicken Pizza - as soon as I get my hands on some hoisin sauce; both local stores were OUT when I looked today!
Meatball Minestrone Soup - making this because I have a few meatballs in the freezer that need to be used up. I don;t have 24, which the recipe calls for, so I might up the veggies a little (which will make it healthier, anyway!).
Three-Cheese Potatoes on the Grill - I have both cheese in the refrigerator and potatoes in the garage that need to be use. The potatoes are slightly sprouty, so this is a good recipe since it calls for the potatoes to be peeled first! We'll have this with a big green/veggie salad.
Navajo Tacos - a perennial favorite, which I had on the menu recently but they got bumped. I make them with a pound of cooked ground beef and a can of Bush's chili beans rather than with canned chili (eeeeeeuw!). We have some organic ground beef in the freezer to use up, and then we're going to try a little break from red meat for the summer.
Kung Pao Tacos - my two favorite foods (Kung Pao and tacos) COMBINED!
Lentil Tacos - I have the filling already made and in the freezer.
Shredded Beef Tacos - I have the filling already made and in the freezer, and it needs to get used before the red meat break happens.
Corn and Black Bean Salad - I can happily eat a big bowl of this as a meal!
Thai Peanut Noodles, probably without the chicken and with a few more veggies added.

Bread
Lately we have been going through bread like crazy - a loaf is definitely not lasting even for a week! It may be because there are open jars of BOTH plum jelly (canned by Mr. Mamie's mom) AND peach jam (canned by his sister) in the fridge... both SOOOOO yummy! However, running out of bread in the middle of the week is NOT COOL, so last weekend I made FOUR loaves in one day and froze three of them. We'll see how long it lasts!
THIS is my favorite recipe, hands-down. Sometimes I add some ground flax seed and/or wheat germ to the dough, sometimes not - it's good as written as well as with additions. I let the bread machine mix the dough and do the first rise (using the DOUGH cycle, which on my machine takes 90 minutes). The I take the dough out, put it in a pan, and let it rise again for 30 minutes. THEN I put it in a cold oven, turn the oven on to 350, and bake for 30 minutes. The bread comes out perfect, EVERY time. So good!

Joshua Trees 2008
I took these photos in April 2008. I had just gotten my Canon Rebel dSLR camera, and my good friend PhotoKay took me to an amazing Joshua tree forest in the bed of the Santa Clara River so I could try some nature photography. These are some of my favorite photos I've ever taken!

Cactus Blossom
Ha! You thought that because I live in the intermountain desert that this would be a post with a cactus flower photo, didn't you? Nope!

Texas Roadhouse Cactus Flower
Earlier this month for my birthday Mr. Mamie and I had a little dinner date at Texas Roadhouse (or, as we say it, Rexus Toadhouse). It's not our usual type of restaurant, which made it kind of fun for a treat. We saw these amazing looking fried "things" coming out of the kitchen while we waited for our table, and we just HAD to order one. Sorry for the terrible low-light iPhone picture quality! That's a "Cactus Flower," which is the MOST DELICIOUS pile of fried onions I have every tasted! I could have just had that and skipped the rest of the meal!
And now I feel bad for not having a REAL cactus flower photo, so here's one for you:
That's actually the bloom on a Joshua tree (also known as a yucca palm). Come back tomorrow and see a whole series of photos I took of these amazing blooms back in 2008!

Choir at Tuachan
A couple of weeks ago I got to accompany Niece as she performed with our school's choir and several others from various elementary schools in the county at the Tuacahn Amphitheater. It was a fun evening of good music, and a nice opportunity to see lots of families from school in a pleasant environment.
We started by having an Aunt Mamie and Niece-only dinner at Red Robin, where the waitress was oddly enamored by our matching school t-shirts.
Here's a shot with lots of choirs onstage together:

Mmmmmmm, french fries!
Our school's choir solo number was "Footloose," and they had some very cute props to go with the song.
Those are giant feet that they're waving around.
Fun event and nice time with the niece!

Sunday Drive 4/15/12
On Sunday we took a little drive, enjoying the sunshine and freshly-washed atmosphere after Saturday's rain. We hunted and found a geocache out by the sod farm, but didn't take a picture because doing so would have revealed to much about the hide location. It was a nicely done little cache, perfect for a casual Sunday outing.
We checked out some neighborhoods I hadn't been in before, and then as we came back home we detoured slightly onto the gravel pit's access road (that's right across from our neighborhood) to snap this picture of the mountains/benches with Saturday's snowfall on them.

Spring Football
Nephew had his first game of the spring football season on Saturday 4/14. Now mind you, LAST weekend were were on the patio in flipflops with the pool filled... however, THIS was the weather on Saturday:
I must say that the 50% chance of rain was a total joke, because it was rainy, cold, and miserable ALL DAY! Naturally the game was at a high school on the other side of the county, so I got to drive there and back in busy Saturday traffic. A venti-sized hot caramel apple spice from St*rbux did make me feel a little better though. ;)
I sat with Mrs. Igor; Niece was at a friends and declined to join us out in the elements, and Mr. Igor got drafted to run the chains during the game.

Nephew is #88 on the left-hand side in the lovely gold helmet. He's the odd-man out when it comes to helmets... the gold one was the only one that fit his giant head!

Menu Plan 4/15 - 4/23, 2012
Sunday 4/15: Chicken enchilada soup, cornbread (Marie Calendar's mix), green salad. This is my absolute FAVORITE soup, and this will probably be the last time we have it until next fall. I've got FRESH corn that we got from Bountiful Basket last summer and froze our own selves to put in it, mmmmmmm!
Monday 4/16: Loaded baked potatoes (meatless - "loading" with veggies and beans), green salad .
Tuesday 4/17: Mr. Mamie has class and I have my "Barnsie time," so cheap eat out (Pollo Loco, deli sandwiches, etc.).
Wednesday 4/18: Brown rice chicken soup made with zesty chicken broth that I had in the freezer, garlic muffins, green salad.
Thursday 4/19: Spaghetti with slow-cooker bolognese sauce (from the freezer), Italian cheese bread, green salad.
Friday 4/20: Burgers on the grill and oven fries (using frozen organic beef patties from Costco).
Saturday 4/21: Navajo tacos and all the fixings (I use one pound of cooked organic ground beef combined with one can of Bush's chili beans instead of canned chili.)

Crazy Easy Slow Cooker Shredded Beef
This "recipe" is so crazy easy that I almost feel lame posting it... but, I have been asked about how I make shredded beef for tacos, so here it is.
Ingredients:
GrandmaT and I figured out the number of portions for the almost 4 pounds of meat I cooked most recently - enough for 20! That is:
~Mamie "When the going gets weird, the weird turn pro!" (Hunter S. Thompson)
Slow Cooker Shredded Beef
Ingredients:
- 4 pounds beef roast, such as a chuck roast (I buy mine at Costco).
- 2 cans chopped tomatoes with green chilies, such as Ro-Tel.
- 1/2 cup or so salsa of your choice (if you plan to re-heat the shredded beef later).
- Trim major fat from roast. Cut to fit slow cooker if needed. The chuck roast from Costco usually comes with two pieces in the package (each about 2 pounds), which works great for me.
- Place roast in slow cooker and cover with contents to two cans of tomatoes with green chilies.
- Cook on low until meat is falling apart. My slow cooker runs a little hot, so for me this is about six hours. It may take 8 or more, depending on your slow cooker.
- When meat is to the falling apart stage, shred with two forks. OPTIONAL: I like to remove the diced tomatoes with a slotted spoon before shredding the meat. I do this because I think that the tomatoes tend to get a little bitter and over-cooked tasting.
GrandmaT and I figured out the number of portions for the almost 4 pounds of meat I cooked most recently - enough for 20! That is:
- The three of us had a dinner of shredded beef tacos the day I cooked the meat. The rest was frozen.
- The next weekend, 8 people dined on shredded beef tacos (1 - 3 each) and lots of other yumminess (to be shared in a post called "Patio Party Menu for 4/7/12" upcoming).
- The night after the patio party, the three of us had a repeat dinner of leftovers. We made a total of 8 tacos.
- The remainder was portioned into two Ziplocs and frozen, to make two more dinners.
- There was a small amount left, which Niece used to make a total of 4 tacos over the course of the afternoon as I write this.
