Recipe: Grammie's Oatmeal Cookies

I wrote this recipe down from Grammie's files on January 1, 1993.  I love, love, love these cookies and make them often! They are easy to make on the spur of the moment, because you don't have to worry about softening butter.

Grammie's Oatmeal Cookies

Ingredients:
•    2 eggs               
•    1 cup oil    (I use canola)           
•    1 cup sugar               
•    I cup brown sugar           
•    1 teaspoon vanilla           
•    1 1/2 cups flour
•    1 teaspoon soda
•    1 teaspoon salt
•    3 cups oats (old-fashioned or quick; NOT instant)
•    1 cup chopped nuts (pecans and walnuts both work great)


Directions:
1.    Beat eggs; add oil, sugars, and vanilla.

2.    Mix in flour, soda, salt, oatmeal and nuts.

3.    Drop by tablespoons on ungreased cookie sheets - I use my cookie scoop and then flatten the cookies out with the palm of my hand. I also use parchment paper on my cookie sheets.

4.    Bake at 375 degrees for 8 – 10 minutes until lightly browned.
