Fourth week of the Pantry Challenge; things are going okay! We spent $24.92 at DaWalmartz on: tomato paste, milk, fruit/veggies, cheese, noodle soup cups for the kids, eggs, and a treat Mr. Mamie "needed." No eating out other than a mini-snack of McDonald's fries on a cold, rainy afternoon when Mr. Mamie had to work a little extra at his office (and I was hanging around keeping him company).
Things got switched-up a little last week (see the "Notes" section below), so don't be confused if there's a repeat here.
1/25 Mon: Shredded Pork Sandwiches with Mozzarella made from the frozen leftovers of our CrockPot Italian Beef (that we made with pork loin), green salad. We have yummy sandwich rolls in the freezer leftover from on New Year's Day sledding/snow picnic trip.
1/26 Tues: I teach university class - Classic Beef Barley Soup, Oatmeal Rolls (from the freezer).
1/27 Wed: Mr. Mamie has class - After Mr. Mamie's class we'll be driving up north (in the dark of night!). I am attending/presenting at a conference Thursday - Saturday. As we head out of town we're planning to stop an In-n-Out Burger for dinner-on-the-go.
1/28 Thurs: At a conference - Either snacks in the hotel room, or an easy/cheap dinner out.
1/29 Fri: At a conference - I have to attend an awards dinner (I'm a board member, so no wiggling out!). Mr. Mamie will have to fend for himself.
1/30 Sat: At a conference - We'll stop in Salt Lake to do some errands and have a nice dinner on the way home from the conference. The kids will be at home with GrandmaT, and they'll have a pre-made frozen casserole from the freezer (we've got ham/broccoli pasta and green-chili chicken noodle stashed away for just this purpose).
1/31 Sun: Kids here - Blueberry Sour-Cream Waffles for breakfast; Hearty Ham and Potato Casserole and green salad for dinner.
EVERYTHING we're cooking this week comes from our pantry/freezer, in keeping with the eat From the Pantry Challenge hosted by Life as Mom and Money Saving Mom.
Some notes about last week's menu:
Turkey dinner was awesome! We going to prepared and roasted it using this method, which worked fabulously.
I thought the Chicken Chowder was so-so - kinda too brothy for my taste. Mr. Mamie said he loved it though, and GrandmaT and Nephew both ate the leftovers with some Never-Mushy Rice stirred in and said is was good.
The Meatloaf Cups from the freezer were starting to dry out. I should have added some glaze or cheese or something. We tried a new recipe for Sesame Noodles, which was fine, but not necessarily better than our usual recipe.
We had the Marie Calendar Chicken Pot Pies on Friday, and did homemade pizza on Saturday. This time I made the pizza crust using whole wheat flour for half the total flour, and everyone approved. I've refined my sauce recipe too, and will publish that later today.
The Shredded Pork Tacos in lightly-fried fresh corn tortillas) made from the frozen leftovers of our CrockPot Italian Beef (that we made with pork loin) got adjusted to Sunday. The bag of shredded pork is WAY FULL, so I am confident that there will be plenty for Shredded Pork + Mozzerella sandwiches on Monday.
Baking:
This week I made whole wheat bread for peanut butter toast, homemade croutons, another loaf of Amish white bread for Mr. Mamie's sandwiches, a chocolate "sock-it-to-me" cake from a recipe my mom cliped from the newspaper eons ago, and oatmeal-craisin cookies (for GoldDad) using the recipe on the back of the Coach's Oats bag.
Breakfasts:
One of my "pantry challenge" goals was to eat up some of the pancakes and waffles that are lurking in our freezers. Also, as a sort-of New Year's resolution, I want to be eating better week-day breakfasts. This week we had some blueberry waffles from the freezer, cold cereal on a couple of days, and peanut butter toast on whole wheat bread on a couple of days.
Sunday's breakfast was "Breakfast Pizza," which was HUGELY POPULAR (with everyone but me; I don't like cooked eggs). The other four ATE THE WHOLE THING! I made it with some chopped, pre-cooked sausage since I wasn't in the mood to get involved with frying bacon at 10 o'clock on Saturday night. I'm going to make another one tonight, as the kids will be here in the morning and then Mr. Mamie can eat the leftovers for a couple more breakfasts. We also tried these whole-grain cinnamon rolls, which we also liked. Both of these new items will be making it into the regular weekend breakfast rotation!
