Blueberry-Buttermilk Waffles
- 2 cups all-purpose white flour
- 1 cup whole wheat flour
- 1 1/2 Tbs. baking powder
- 1 1/2 tsp. baking soda
- 3/4 tsp salt
- 6 eggs
- 3 cups buttermilk
- 1/2 cup butter, melted
- 1 1/2 cups fresh or frozen blueberries
- Combine the dry ingredients and set aside.
- In a mixing bowl, beat eggs until light.
- Add buttermilk to eggs and mix well.
- Add dry ingredients to wet and a beat until the batter is smooth.
- Stir in the melted butter.
- Fold in blueberries.
- Grease a heated waffle iron and pour 1/2 - 3/4 cup batter into the iron (use an amount appropriate to the size of your waffle iron).
- Bake according to the waffle iron's instructions.
- Serve with butter and and syrup; enjoy!
