Menu - August and into September

Long time, no posts - I know. REALLY busy getting ready for school to start and tending to GolfDad following knee replacement surgery.

I did finally sit down today and figure out some dinner options for the next few weeks.  We have chicken, pork, and ground beef in the freezer after a summer of eating mostly vegetarian. Vegetarian is good, but we're ready to add some heavier proteins back in the mix.  I made a list of meals I could do a lot of advance prep for, as the coming weeks are EXTREMELY busy.  All the links are below. We'll be supplementing with several "big salad" nights, and sides will be light and easy - green salad, rice, fresh fruits and vegetables.

Chicken:

Slow Cooker Marinara with Spaghetti

Vegetable Tamale Pie
Breakfast for dinner with Sour Cream Blueberry waffles and eggs
Breakfast for dinner with Kris Kringle (oatmeal) pancakes and eggs

I'll be making a bunch of "freezer bags" in the next few days, and hopefully that'll carry us for awhile!
