Menu Plan 9/26/11 - 10/2/11


 

Yep, I've been a bad blogger... c'est la vie!

I need to get back to STRUCTURED meal planning, and the best way to be accountable is to post it on the blog. So here we go!

Monday - Monterey Chicken Quesadillas (using bacon left over from Sunday's breakfast), Taco Rice, green salad.  Grilling the chicken and using the leftovers to make Ensalada de Pollo for lunches, the recipe for which I will post later this week.

Tuesday - CrockPot Chicken and Wild Rice Soup, Multigrain French Bread (from Walmart), green salad. The soup is a new; thanks to my SIL "HockeyFan" for the suggestion!

Wednesday - Cowboy Spaghetti (using leftover bacon from Sunday's breakfast), Texas Garlic Toast (from Walmart), green salad.

Thursday - Mom's Tuna Casserole, green beans, green salad. Tomorrow would have been Wombat's 69th birthday, and Niece and I have been craving this (she'll be with us for dinner on Thursdays during Nephew's football season). 

Friday - Asian Chicken on the grill, Yellow Rice, green salad.

Saturday - Homemade pizza.

Sunday - Chicken Enchilada Soup, cornbread, green salad.

  2. Hahaha, thanks, you are too adorable! What you gotta try is the recipe I made tonight - "Lasagna Cupcakes." Total hit! You could easily make both meaty and vegetarian versions (with spinach, zucchini, whatever). Gotta love cute food! Here's the link:
